Assamese Cuisine
To the outstanding foodie, Assam has to
offer an interesting collection of culinary jewels. Assamese food is all about
minimizing waste. It constitutes a various mixture of ingredients starting from
natural vegetables and the complex. There is some special cuisines of Assam.
1. 1. Khar : From many decades Assamese people call by “Khar khua asomiya” means who eat Khar. This Khar was made by filtering out the liquid from a solution of water and dried, charred banana peel. It is very useful and sometimes it works as a medicine. Assamese people use it in making fish curry, papaya curry, mutton curry etc. Assamese people use it as a medicine for cough.

2. Poita
vat: Assamese Porta is a very humble breakfast dish. It’s a beneficial body
coolant for summers poita bhat with aloo pitika is so enjoyable! The little
fermented rice has a lot more health benefits. The fermented rice soupy type of
bhat is traditionally served with mashed potato which is seasoned with mustard
oil and some green chilies for flavor.
4. Polu
or leta: Assam famous for its silk but
stir-fried silkworms are a delicacy favored by many Assamese. After the silk
is taken out from the cocoon, the pupa is boiled in water then stir-fried.
Essentially a spicy tribal recipe, it has a crunchy outside and a soft gooey
center. It is very useful and it’s full of Protein.
5. Doi sira: Mostly eaten during Bihu, Doi-Chira is also consumed breakfast. It is essentially a dish that contains flattened rice mixed with curd, cream and jiggery, making it a favorite among locals. It is a traditional Assamese dish.
